Chives

Name: chives
Scientific name: allium schoenoprasm
Possible uses: seasoning, garnish
Part of plant used: fresh picked leaves
Description: Bulb-forming perennials with flat or hollow leaves and round clusters of small flowers.  Many, including onion and garlic, have pungent leaves and bulbs, but the flowers may smell quite sweet.  This hardy perennial makes a pincushion-like clump of slender, hollow leaves, 12-18 in. long, with a mild oniony flavor.  New growth starts in early spring.  The leaves are very hardy and don't die back in fall until killed by hard frost.  Round 1-in. heads of fragrant, edible, lilac-purple flowers are showy for about a month in late spring.  Zone 3.
How to grow: Full or part sun.  Average soil and watering.  Shear after flowering to promote new growth.  In cold climates, pot up part of clump to keep on a cool sunny windowsill in the winter.  Easily raised from seed.  Divide in early spring or after flowering.
