- Quinoa-1 cup
- Water-2 cups
- Parsley-2 cups, chopped
- Fennel- 2 cups, chopped
- Green onions- 6
- Tomatoes-1 cup,sliced
- Cucumber-1 cup, diced
- Mint-1/4 cup, chopped
- Lemon zest-1/2 cup of lemon juice

Directions
In a saucepan, bring the quinoa to boil. Let it simmer until the water is absorbed. Take all the vegetables and chop them. In a bowl, transfer the quinoa and add all the veggies along with lemon juice, zest, and olive oil. Mix well and garnish with salt, pepper and paprika.
