Scientific name: Armoracia rusticana also known formerly as Cochlearia armoracia

Description: Perennials with deep roots, large leaves, and clusters of tiny flowers. A hardy perennial that forms a clump of oblong dark green leaves up to 15 in. long, with crinkled edges. Bloom in earl summer, with small pale flowers clustered on stalks up to 4 ft. tall. A variegated form has pretty white markings on its leaves. Zone 3.
How to grow: Full sun.. Average soil. Choose the site carefully; once you plant horseradish, you'll always have it. Plant a pencil-sized root cutting in early spring. Harvest by digging the root in fall. Any bits of broken root will resprout the next year. Flea beetles may bite holes in the leaves. Can't take extreme heat.
