Ingredients
- 2 1/4 cup unbleached flour
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Zest of 1 orange
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup oil or melted butter
- juice of 1 orange (about 3 tablespoons)
- 1 cup halved cranberres
- 1/2 cup chopped nuts
Directions
- Heat the oven to 400 degrees Fahrenheit. Line a muffin tn with muffin papers or butter and flour the muffin tin.
- In a large bowl, combine the flour, sugar, salt, baking powder, baking soda, and orange zest
- In a smaller bowl, whisk together the buttermilk, eggs, oil, and orange juice
- Using a spoon, gently mix the wet ingredients into the dry ingredients, stirring as little as possible; there should be a few lumps. Fold in the cranberries and nuts.
- Scoop into the muffin pan, and bake for 10 minutes. Lower the eat to 350 degrees Fahrenheit and continue baking for 10-15 minutes longer until the tops spring back when lightly pressed. Cool
