Cranberry-Orange-Nut Muffins

Cranberry-Orange-Nut Muffins
makes about 12

Ingredients

  • 2 1/4 cup unbleached flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt 
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Zest of 1 orange
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup oil or melted butter
  • juice of 1 orange (about 3 tablespoons)
  • 1 cup halved cranberres
  • 1/2 cup chopped nuts 
Directions
  1. Heat the oven to 400 degrees Fahrenheit.  Line a muffin tn with muffin papers or butter and flour the muffin tin.  
  2. In a large bowl, combine the flour, sugar, salt, baking powder, baking soda, and orange zest
  3. In a smaller bowl, whisk together the buttermilk, eggs, oil, and orange juice
  4. Using a spoon, gently mix the wet ingredients into the dry ingredients, stirring as little as possible; there should be a few lumps.  Fold in the cranberries and nuts.
  5. Scoop into the muffin pan, and bake for 10 minutes.  Lower the eat to 350 degrees Fahrenheit and continue baking for 10-15 minutes longer until the tops spring back when lightly pressed.  Cool
