Cattail Flower Griddle
Cakes
Makes about 12-2” cakes
Ingredients
- 2 large eggs
- 1 tablespoon milk
- 2 tablespoons flour
- ½ teaspoon baking powder
- 1 cup cattail flower spike pulp
- 1 tablespoon minced sweet red pepper
- 1 tablespoon minced glasswort, chopped chives, or field garlic (optional)
- ½ teaspoon salt
- Pinch of pepper
Optional: garnish with sour cream and glasswort, chopped
chives, or field garlic
Directions
- Mix the milk, egg, flour, and baking powder together with a whisk until no lumps remain
- Stir in the remaining ingredients
- Cook the batter by tablespoonful on medium-eat griddle, flipping after a minute, until browned on both sides
- Allow the cakes to cool, and serve with a dollop of sour cream and more glasswort as garnish
