Cattail Flower Griddle Cakes

Cattail Flower Griddle Cakes
Makes about 12-2” cakes

Ingredients
  • 2 large eggs
  • 1 tablespoon milk
  • 2 tablespoons flour
  • ½ teaspoon baking powder
  • 1 cup cattail flower spike pulp
  • 1 tablespoon minced sweet red pepper
  • 1 tablespoon minced glasswort, chopped chives, or field garlic (optional)
  • ½ teaspoon salt
  • Pinch of pepper

Optional: garnish with sour cream and glasswort, chopped chives, or field garlic

Directions
  1. Mix the milk, egg, flour, and baking powder together with a whisk until no lumps remain
  2. Stir in the remaining ingredients
  3. Cook the batter by tablespoonful on medium-eat griddle, flipping after a minute, until browned on both sides
  4. Allow the cakes to cool, and serve with a dollop of sour cream and more glasswort as garnish
