- 4 cups of elderberreis and 3 cups of water in a pot
- bring to a boil slowly, reduce heat, and simmergently for 10-15 minutes
- remove from heat and carefully strain. be sure to crush the pulp through the strainer to extract as much juice as possible, avoiding any inclusion of skins
- add 1/2 honey or sugar, more or less to tase, and reheat.
- simmer gently, uncovered, for 25 to 20 minutes
- remove from heat and bottle when cool
